Kuih Dadar

Ingredients

Pancake Batter

  • 100 g plain flour
  • 100 ml coconut cream
  • 1 tbsp olive oil
  • 1/2 tsp pandan paste
  • 1/4 tsp salt
  • 2 eggs
Filling

  • 85 g palm sugar
  • 50 g dessicated coconut
  • 50 ml coconut cream
  • 125 ml water

Instructions

  1. Sift flour and salt together. Add eggs, coconut cream, olive oil, and pandan paste. Mix well to obtain a smooth batter. Stand the batter aside for 30 minutes.
  2. In the meantime, prepare the coconut filling. Melt palm sugar with water on low heat. When the syrup thickens, pour in the coconut cream, and dessicated coconut. Mix well to obtain a sticky coconut filling. Set aside to cool.
  3. Heat up a non-stick pan. Add some oil to the pan.
  4. Spoon some batter onto the pan. Tilt the pan to form a thin pancake. Fry at low heat until the pancake is lightly brown on both sides. Remove from pan.
  5. Repeat step 3 and 4 until all batter is finished. If the batter thickens, add some water. Allow the pancakes to cool before going on to the next step.
  6. Put some filling in the middle of the pancake. Wrap and roll like a spring roll to enclose the filling.
  7. Arrange on plate for serving.
