Instructions
- Sift flour and salt together. Add eggs, coconut cream, olive oil, and pandan paste. Mix well to obtain a smooth batter. Stand the batter aside for 30 minutes.
- In the meantime, prepare the coconut filling. Melt palm sugar with water on low heat. When the syrup thickens, pour in the coconut cream, and dessicated coconut. Mix well to obtain a sticky coconut filling. Set aside to cool.
- Heat up a non-stick pan. Add some oil to the pan.
- Spoon some batter onto the pan. Tilt the pan to form a thin pancake. Fry at low heat until the pancake is lightly brown on both sides. Remove from pan.
- Repeat step 3 and 4 until all batter is finished. If the batter thickens, add some water. Allow the pancakes to cool before going on to the next step.
- Put some filling in the middle of the pancake. Wrap and roll like a spring roll to enclose the filling.
- Arrange on plate for serving.
