Tea Cakes

Ingredients

  • 200 g self raising flour
  • a pinch of salt
  • 70 g butter
  • 55 g sugar
  • 2 eggs (separate 1 egg white)
  • 2 tbsp milk
  • 85 g currants
  • vanilla essence
  • granulated sugar for topping

Instructions

  1. Sieve the flour, and salt.
  2. Cream butter, and sugar until light and fluffy.
  3. Beat the eggs.
  4. Stir in the milk and currants.
  5. Fold in the flour mixture. Mix well.
  6. Leave in cool place for a short while.
  7. Form dough into small balls, dip top in the slightly beaten egg white, and then in sugar.
  8. Place on greased baking tray, sugared side up, for 15-20 minutes in oven at 170-177°C.
