Tea Cakes
Ingredients
- 200 g self raising flour
- a pinch of salt
- 70 g butter
- 55 g sugar
- 2 eggs (separate 1 egg white)
- 2 tbsp milk
- 85 g currants
- vanilla essence
- granulated sugar for topping
Instructions
- Sieve the flour, and salt.
- Cream butter, and sugar until light and fluffy.
- Beat the eggs.
- Stir in the milk and currants.
- Fold in the flour mixture. Mix well.
- Leave in cool place for a short while.
- Form dough into small balls, dip top in the slightly beaten egg white, and then in sugar.
- Place on greased baking tray, sugared side up, for 15-20 minutes in oven at 170-177°C.
